what better way to start your morning than with a delicious coffee cake. Ingredients:
2 1/2 cups all-purpose flour |
3/4 cup sugar |
1 cup brown sugar |
1/8 teaspoon nutmeg |
1 teaspoon cinnamon |
3/4 cup vegetable oil |
2/3 cup crushed pecans |
1 egg |
1/2 teaspoon salt |
2 teaspoons soda |
1 cup buttermilk (may substitute 1 tablespoon lemon juice or vinegar plus milk to make 1 cup. let stand 5 minutes before adding to batter |
Directions:
1. Preheat oven to 350. 2. Combine first 6 ingredients till crumbs are formed. 3. Remove 1/3 cup crumbs. 4. In a separate bowl, mix 2/3 cup crushed pecans and crumbs. 5. Set aside for topping. 6. Add remaining ingredients and mix well. 7. Pour into a greased 8 x 11.5 .glass baking dish. 8. Sprinkle topping over batter. 9. Bake for 30 minutes or until seems firm on top. 10. Serve warm |
