Wondering what to do with those extra green plums growing on your tree? Why not put a few aside, and make Umeshu, and give it for Christmas? Ingredients:
2 lbs green plums |
3/4 lb rock sugar |
2 quarts sake (or soju) |
Directions:
1. Clean and remove stems from plums. Individually dry them with a sterile cloth. 2. Layer the plums with rock sugar into a large, non reactive container (glass jars?), and pour the soju over them. 3. Seal well and store the jars in a cool dark place for 3 or more months. After 3 months it can be drunk, but it's better the longer you keep it. |
