1 lb boneless skinless chicken breast, cut into 1 inch chunks |
1 (10 ounce) can ro-tel tomatoes |
4 (10 inch) flour tortillas |
2 cups shredded cheddar cheese |
Directions:
1. Cook chicken and tomatoes over medium heat 10-15 minutes. Set aside. 2. Fill each tortilla with chicken mixture and some cheese; fold in half. 3. Cook in skillet over medium heat 3 minutes per side or until crisp. Cut and serve. |
