This is my all-time favorite pumpkin bread recipe. The addition of the vanilla pudding makes it so moist and delicious! Ingredients:
5 eggs |
1 1/4 cups vegetable oil |
1 (15 ounce) can solid-pack pumpkin |
2 cups flour |
2 cups sugar |
2 (3 ounce) packages cook & serve vanilla pudding mix |
1 teaspoon baking soda |
1 teaspoon cinnamon |
1/2 teaspoon salt |
Directions:
1. In a mixing bowl, beat eggs. 2. Add oil and pumpkin; beat until smooth. 3. Combine remaining ingredients; gradually beat into pumpkin mixture. 4. Pour into 5 (5 x 2 1/2 ) OR 2 (8 x 4 ) loaf pans. 5. Bake the 5 pans at 325^ for 50 to 55 minutes OR 75 to 80 minutes for the 8 pans. 6. Cool in pans 10 minutes before removing to cool on racks. |
