Ultimate Macaroni and Cheese |

From Sunset Magazine- I'm making this for Christmas this year. I'll update after I see how it goes. It sounds good- and we LOVE a good macaroni and cheese! I've changed it slightly based on family preference. UPDATE 12-25-06- Well, it is VERY rich- definitely not a kid dish. But the adults all liked it. Ingredients:
8 ounces cavatappi pasta or 8 ounces macaroni |
1/4 teaspoon kosher salt |
2 tablespoons unsalted butter |
1/2 cup shallot, finely chopped |
2 tablespoons all-purpose flour |
1 1/4 cups dry white wine |
2/3 cup half-and-half |
7 ounces gruyere, grated |
3 ounces gouda cheese, grated |
1 tablespoon dijon mustard |
1/8 teaspoon cayenne |
1/8 teaspoon nutmeg |
1 1/2 tablespoons butter |
1/4 teaspoon kosher salt |
4 ounces sourdough bread, torn into large pieces |
Directions:
1. Boil pasta according to package directions. 2. In frying pan, saute shallots in butter until light golden. 3. Sprinkle with flour- stirring til well mixed. 4. Add wine and stir. 5. Add cream and stir well. 6. Add mustard, cayenne and nutmeg. 7. Sprinkle in cheese, one large handful at a time. 8. Stir in cooked pasta and mix well. 9. Pour into a 2-qt baking dish. 10. TOPPING- in food processor, put in all ingredients and pulse til well mixed. 11. Sprinkle on top of pasta. 12. Bake at 400 degrees 20 minutes- til topping is brown and cheese is bubbling. |
