This is a recipe that was given to me in the early 1990's by a coworker. She brought this in to celebrate someone's birthday and everyone loved the cake. It is simple, tasty and well liked by anyone who enjoy's apples. I found that this cake cooks best in a bundt pan. Ingredients:
3/4 cup vegetable oil |
2 cups sugar |
2 eggs |
1 teaspoon vanilla |
2 cups flour |
2 teaspoons cinnamon |
1 teaspoon nutmeg |
1 teaspoon baking soda |
1/2 teaspoon salt |
4 cups apples, peeled, cored and diced |
1/2 cup walnuts, chopped (or pecans) |
Directions:
1. Cream sugar, eggs and oil. Add dry ingredients and mix well. Add finely diced, apples and nuts (optional) and mix in by hand. 2. Pour cake batter in a well greased loaf pan or preferrably a greased bundt pan. 3. Bake at 350F for 45 minutes or until knife inserted into center comes out clean. 4. Serve with ice cream if desired. |
