Ultimate Chicken Quesadillas |

My son was at a party and he had came home raving about how good these were, so I called and got the recipe from another Mom. They are very good and pretty quick fix for super. Ingredients:
2 cups cooked chicken (chopped or shredded) |
1 medium onion (diced) |
1 (4 ounce) can diced green chilies |
1 (10 ounce) can rotel (drained) |
1/4 teaspoon cumin |
1/4 teaspoon garlic salt |
16 ounces sour cream |
3 cups shredded cheddar cheese |
6 inches flour tortillas |
2 tablespoons vegetable oil |
Directions:
1. Saute onion, rotel, spices and chicken in a bit of the oil until hot. (I use a rotisserie chicken from the supermarket and I like to slice fresh mushrooms in to this mixture also). 2. Spread some sour cream on 5 tortilla shells. I like it kind of thick. 3. Spread the chicken and vegetable mixture, I use quite a bit. 4. Sprinkle with cheese then top with another tortilla shell. Mash it down. 5. Fry them in a bit of vegetable oil in a nonstick skillet for a couple of minutes on each side. |
