I came across this recipe on the back of the box of Bisquick. Ingredients:
1 lb boneless skinless chicken breast |
2/3 cup original bisquick baking mix |
1/3 cup grated parmesan cheese |
1/2 teaspoon salt |
1/2 teaspoon paprika |
1 egg, slightly beaten |
1 tablespoon butter, melted |
Directions:
1. Heat oven to 450 degrees. 2. Line cookie sheet with foil, spray with cooking spray. 3. Cut chicken breasts crossways in 1/2 inch strips. 4. In a 1 gallon resealable food storage plastic bag, mix Bisquick mix, cheese, salt and paprika. 5. Dip half the chicken strips into egg, place in bag. Seal bag, shake to coat. 6. Place chicken on cookie sheet. Repeat to use up remaining chicken. Drizzle butter over chicken. 7. Bake 12 - 14 minutes, turning halfway through bake time with pancake turner, until no longer pink in center. |
