From The Jewish Mama's Kitchen . Ingredients:
1 tablespoon vegetable oil |
2 large eggs |
1 cup superfine sugar |
1/2 margarine, melted |
1 1/2 teaspoons baking powder |
1 teaspoon almond extract |
1 cup self-rising flour |
4 -5 sweet green apples, peeled, cored and sliced thinly |
1 tablespoon vanilla sugar |
1 tablespoon light brown sugar |
Directions:
1. Preheat oven to 350ยบ. 2. Grease and line a 8 1/2 springform cake pan. 3. Mix eggs and superfine sugar until blended. 4. Add melted margerine, baking powder and almond extract to egg/sugar mix. 5. Slowly add flour to mixture, while stirring. Mix until well blended. 6. Pour two thirds of the batter into the pan. Place sliced apples over batter. Cover apples with rest of batter. Sprinkle vanilla sugar over batter. 7. Bake until cake is golden brown. (50-60 mins). Let cake cool slightly before serving. |
