Ukrainian Cornmeal Dressing (Nachynka) for 100 People |

It is often made in large quantities for weddings and community dinners. Ingredients:
1 cup diced onion |
1 lb butter |
6 cups cornmeal |
6 quarts milk |
4 cups cream |
1/3 cup sugar |
2 tablespoons salt |
2 teaspoons pepper |
24 eggs |
4 teaspoons baking powder |
Directions:
1. Sauté onions in butter. 2. Add cornmeal and fry for a little longer. 3. Combine milk, cream, sugar, salt, and pepper. 4. Heat until warm, add to cornmeal, mixing constantly. 5. Let cook till thickened (if lumpy beat with egg beater). 6. Remove from heat and add well-beaten eggs and baking powder. 7. Fold in gently. 8. Pour into large greased roasting pan. 9. Bake uncovered at 350°F for 1 to 1 1/2 hours, or until golden brown. |
