Ugly Duckling Pudding Cake |

This comes from my personal archives from years back. I have no idea how the cake got it's name but it quite good. Ingredients:
1 (18 1/4 ounce) package yellow cake mix |
1 (3 ounce) package instant lemon pudding mix (4 serving size) |
1 (16 ounce) can fruit cocktail in heavy syrup |
1 cup coconut, flaked |
4 eggs |
1/4 cup oil |
1/2 cup brown sugar |
1/2 cup nuts, chopped |
1/2 cup butter |
1/2 cup sugar |
1 1/3 cups coconut |
1/2 cup evaporated milk |
Directions:
1. Blend all cake ingredients except for brown sugar and nuts and beat 4 minutes with electric mixer at med. speed. 2. Pour into a well greased 9 x 13 pan. 3. Sprinkle with the brown sugar and nuts. 4. Bake in a 325F oven about 45 minutes or tested done. Cool 15 minutes. 5. Meanwhile make glaze by combining glaze ingredients and boiling for 2 minutes. 6. Pour over warm cake. |
