Warm Udon noodle vegetable salad, great for lunch
Ingredients:
100 g udon noodles
50 g baby spinach
1 tomato
100 corn kernels
100 g celery
4 button mushrooms
1 zucchini
200 g tuna in water
1 carrot
1 tablespoon low fat cottage cheese
50 g capsicums
Directions:
1. Cook udons for one minute.
2. Add all other ingredients and cook for 2-3 minutes or until hot.
3. serve with pepper and oyster sauce.
