Warm Udon noodle vegetable salad, great for lunch Ingredients:
100 g udon noodles |
50 g baby spinach |
1 tomato |
100 corn kernels |
100 g celery |
4 button mushrooms |
1 zucchini |
200 g tuna in water |
1 carrot |
1 tablespoon low fat cottage cheese |
50 g capsicums |
Directions:
1. Cook udons for one minute. 2. Add all other ingredients and cook for 2-3 minutes or until hot. 3. serve with pepper and oyster sauce. |
