Tzimmes in Orange Juice

I love Tzimmes, always in for a new twist on this age-old recipe. This is my latest variation.
Ingredients:
10 large carrots, cut in slices
1 1/2 cups dried pitted prunes
2 1/2 cups orange juice
1/3 cup sugar
1/2 lemon, zest of
1 teaspoon fresh grated ginger
Directions:
1. Put carrots and prune in a pot.
2. Add orange juice.
3. Boil for 10 minutes.
4. Stir in sugar.
5. Simmer gently for 2 hours until liquid is almost absorbed.
6. Sprinkle with lemon and ginger.
7. Serve.
