A little less fat, but just as much flavor. Use 2 small cukes. Ingredients:
2 cucumbers, peeled and diced |
1 1/4 cup no-fat yogurt |
2 tbs olive oil |
4 cloves garlic, minced |
1 tsp dried dill |
3 tsp lemon juice |
Directions:
1. Combine yogurt, olive oil, dill, lemon juice, and garlic in a bowl. Cover and refrigerate one hour. 2. Dry cukes by patting with paper towels. 3. Whisk yogurt mixture until smooth. Add cucumbers to the yogurt mixture. Salt and pepper to taste. |
