Ideal with BBQ and roasted meat Ingredients:
1 whole fat drained yogurt (200 gr.) |
1 spoonful of extra virgin olive oil |
1 - 2 cloves of garlic |
1 pinch of salt |
1/ 2 big cucumber |
1 tablespoonful of mild mustard (optional) |
dried mint |
Directions:
1. Peel the cucumber, remove seeds (if any with a spoon), shred the cucumbers, then squeeze to drain excess liquid.. 2. Peel and mince the garlic together with the salt. 3. Add to cucumber and mix all ingredients together. If you like add 1 table spoonful of mild mustard. Sprinkle some dried mint on top. 4. Refrigerate at least 30 minutes before consuming, always keeping it covered to avoid smell in fridge. 5. Tip: If you do not have drained yogurt, place the yogurt in a large square of double cheesecloth. Tie the cheesecloth at the top and let any excess liquid drain for about 4 hours. 6. Tip: If you are on diet or have high cholesterol use 0% fat yogurt and only 1 teaspoonful of oil. |
