We made a classic Greek sauce of creamy yogurt and cucumber for the base of this tangy salad. Serve with Mixed Greens Salad.
Ingredients:
2/3 cup plain 2% reduced-fat greek yogurt
1/4 cup finely chopped red onion
1 tablespoon fresh lemon juice
2 teaspoons chopped fresh dill
3/8 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 cucumber, seeded and shredded
1 garlic clove, minced
2 cups shredded skinless, boneless rotisserie chicken breast
3 ounces multigrain pita chips
mixed greens salad
Directions:
1. Combine first 8 ingredients in a medium bowl, stirring with a whisk. Add chicken; toss to coat. Serve with pita chips.
