We made a classic Greek sauce of creamy yogurt and cucumber for the base of this tangy salad. Serve with Mixed Greens Salad. Ingredients:
2/3 cup plain 2% reduced-fat greek yogurt |
1/4 cup finely chopped red onion |
1 tablespoon fresh lemon juice |
2 teaspoons chopped fresh dill |
3/8 teaspoon kosher salt |
1/4 teaspoon freshly ground black pepper |
1 cucumber, seeded and shredded |
1 garlic clove, minced |
2 cups shredded skinless, boneless rotisserie chicken breast |
3 ounces multigrain pita chips |

Directions:
1. Combine first 8 ingredients in a medium bowl, stirring with a whisk. Add chicken; toss to coat. Serve with pita chips. |
