Tzatziki is a greek classic, so refreshing on the palate, and perfect for jazzing up kebabs and salads. Ingredients:
1/2 cucumber |
200 g greek yogurt |
4 tablespoons chopped fresh mint |
2 garlic cloves, crushed |
1/2 teaspoon dried oregano |
1 teaspoon caster sugar |
1 lime, juice of |
salt & freshly ground black pepper |
Directions:
1. Grate the cucumber into a sieve set over a bowl, or finely dice. Try to avoid using the central seeded core as it is very watery. Squeeze out any excess water by pressing the cucumber down into the sieve and transfer to a bowl. Add the yogurt, garlic, mint, oregano, caster sugar and lime juice. Season to taste and chill until ready to use. Garnish with a sprig of mint and serve with olices and pitta bread. |
