Ingredients:
1/4 cup plus 2 tablespoons butter or margarine, softened |
1 1/2 cups firmly packed brown sugar |
3 eggs |
1/4 cup plus 2 tablespoons whipping cream |
2 teaspoons grated lemon rind |
3 tablespoons lemon juice |
1/2 teaspoon ground cinnamon |
1/4 teaspoon ground allspice |
1 unbaked (9-inch) pastry shell |
1 tablespoon cornmeal |
Directions:
1. Cream butter and sugar; add eggs, one at a time, beating well after each addition. Add whipping cream, lemon rind, juice, cinnamon, and allspice; beat well. Pour filling into pastry shell. Sprinkle cornmeal evenly over top of filling. Bake at 300° for 45 minutes. Cool pie before slicing. |
