Tyler Florence's Avocado Salad With Lemon, Bacon and Watercress

Simple flavors and ingredients that just taste great together and unbelievably, the most difficult step is cooking the bacon. :-) From Eat This Book by Tyler Florence. This makes a pretty salad but it's simple to make...great flavor, no fuss. What's not to love?
Ingredients:
1/2 lb bacon, sliced
3 avocados, split, pitted and peeled
1 lemon, juice of
1/4 cup extra virgin olive oil
kosher salt & freshly ground black pepper, to taste
1/2 bunch watercress, stems trimmed
Directions:
1. Preheat the oven to 375 degrees. Lay the bacon on a baking sheet lined with parchment and bake for 15 minutes, until crispy. Transfer the bacon to a plate lined with paper towels and let it drain for a couple of minutes.
2. Break or cut the avocados into chunks and arrange on a platter. Drizzle with the lemon juice and olive oil. Sprinkle with salt and pepper. Scatter the watercress over the avocado and top with the bacon.
