Always a populaar vegetable, Runner Beans lend themselves to appetising flavour variations Ingredients:
beans with tomato sauce |
1 lb. fresh greeen beans, topped and tailed |
1.1/2 oz butter |
1 tspn chopped basil |
1/2 freshly grated lemon rind |
1 garlic clove, crushed |
2 tomatoes, peeled and quartered |
salt and pepper to taste |
beans with italian sauce |
1 lb. fresh green beans, topped and tailed |
1/2 oz butter |
3 tbspn whipping cream |
freshley grated nutmeg, to taste |
pepper to taste |
3 tbspn parmesan cheese |
Directions:
1. (1) Cook beans in boiling salted water for 6-7 minutes until just tender but still firm to the bite. Drain well 2. Melt butter un saucepan. 3. Stir in Basil, Lemon rind and garlic. 4. Add Tomatoes and cook gently until heaated through. 5. Mix beans with sauce, season to taste. seerve hot. 6. (2) Cook and drain beans 7. Melt butter in saucepan. Stir in cream, nutmeg, pepper and 2 tbspn Prmesan cheese. 8. Add beans to pan, het gently. 9. Season to taste and sprinkle with remaining cheese. 10. serve hot. |
