Nothing like a good old-fashioned chocolate chip cookie, with the plus of peanuts! Ingredients:
2 1/2 cups plain flour |
1 tsp baking soda |
12 tbsp butter, softened |
1/3 cup chunky peanut butter |
11/2 cups light brown sugar |
2 eggs |
1 tbsp vanilla |
8 oz dark chocolate chips |
8oz white chocolate chips |
1/2 cup chopped pecans |
Directions:
1. Beat butter and peanut paste with brown sugar until fluffy. 2. Add eggs and vanilla and beat well. 3. Beat in the flour sifted with the baking soda. 4. Stir in the chocolate chips and nuts. 5. Line four cookie sheets with foil. 6. Fill an ice-cream scoop to slightly heaping with dough and drop onto prepared sheet. 7. Place farther apart than usual- six will fit on a swiss-roll-sized tin. 8. Chill in refrigerator at least 45 minutes. 9. Bake in the center of a 350*F oven for 17 to 22 minutes, or until the edges are set but the centers still a little soft. 10. Do not over-bake. 11. Cool on trays a couple of minutes before removing to rack to cool. |
