For all tomato lovers (like me!). Ingredients:
1 cup tomato juice |
1/4 cup red wine vinegar |
1 tablespoon extra virgin olive oil |
1 garlic clove, minced |
1/4 teaspoon red pepper flakes |
salt and pepper |
2 cups red grape tomatoes or 2 cups cherry tomatoes, halved |
1 cup cucumber, chopped |
1 yellow bell pepper, medium, chopped |
1/3 cup green onion, chopped |
1/3 cup fresh cilantro or 1/3 cup basil, chopped |
1 cup small shell pasta, cooked |
Directions:
1. Whisk all the dressing ingredients together and set aside. 2. Gently toss salad with dressing, allow to set for 30 minute. 3. Serve. |
