Great squash casserole that I got from a friend years ago. Ingredients:
3 small to medium size zucchini,sliced |
3 small to medium size yellow squash,sliced |
1-1/2 sticks margarine,melted |
1 small to medium onion,diced |
8 oz. sour cream |
1 carrot,shredded |
1 small pkg. pepperidge farm stuffing mix |
1 can cream of chicken soup |
Directions:
1. Combine sour cream and cream of chicken soup with shredded carrot. 2. When squash is cooled,fold into the sour cream mixture. Melt the margarine. combine with stuffing mix. 3. Put 1/2 of stuffing mix into casserole dish. Pour squash mixture into the dish,then the rest of the stuffing mix on top. 4. Bake uncovered at 350 degrees for 30 mins. |
