Not your traditional waffles, crisp and oniony (is oniony a word?) Serve them with cream cheese. Make a great dinner side too! Ingredients:
1 1/2 cup lowfat buttermilk |
1/2 cup unsalted butter, melted |
2 eggs |
3 tbl green onion, finely minced |
2 tbl dried onions |
1 1/2 cup flour |
1/2 cup dried potato flakes |
1 tbl baking powder |
1/2 tsp baking soda |
1 tsp kosher or sea salt |
Directions:
1. Preheat your waffle iron. 2. Combine buttermilk through dried onions. 3. Let stand 10 minutes. 4. In a separate bowl combine dry ingredients (flour through salt). 5. Add wet ingredients. 6. Mix with a fork. Do not over mix, the batter will be lumpy. 7. Spoon onto waffle iron. 8. Cook until golden brown. |
