Two-Color Sweet Potatoes

Ingredients:
2 whole(s) yellow sweet potatoes (med - lg)
2 orange sweet pototoes (med-lg)
3 tablespoon(s) brown sugar (dark or light)
1/4 cup(s) finely ground pecans or walnuts
2 tablespoon(s) butter
2 tangerines (keep zest from 1)
Directions:
1. Throughly cook and skin the sweet potatoes. Cut into 1/4-inch slices. Arrange overlapping slices in rows in a prepared baking dish, alternating the two colors. Pour the tangerine juice over the sweet potatoes.{NOTE: I try to find evenly formed potatoes in order to get the nicest presentation}
2. Blend together the brown sugar, ground nuts and butter. Spread evenly over the sweet potato slices, and sprinkle the zest over all. {NOTE: I melt all of the above and pour over the potatoes}
3. Bake at 375 degrees until the top is brown, about 25 minutes.
