a quick 5 minute side dish Ingredients:
2 cups trimmed green beans |
1 cup trimmed waxed beans |
1 teaspoon grated lime rind |
1 tablespoon fresh lime juice |
1 tablespoon extra-virgin olive oil |
1 tablespoon chopped fresh flat-leaf parsley |
1/4 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Cook all the beans in a large pot of boiling water for 4 minutes, or until crisp-tender. 2. Drain and rinse with cold water. 3. Combine the last 6 ingredients in a medium bowl, and stir. 4. Add beans, and toss to coat. |
