TWICE BAKED NEW POTATOES Here is a recipe that I perfected over the weekend. I made 30 potatoes (60 halves) and they were gobbled up within seconds. If you need a good potato recipe or a good pot luck dish, here it is. Read more . Yummy. Ingredients:
1-1/2 pounds small new potatoes |
2 teaspoons sea salt |
1 teaspoon coarsely black pepper |
3 tablespoons vegetable oil |
1/2 cup shredded monterrey jack cheese |
1/2 cup shredded asiago cheese |
1/2 cup sour cream |
3 ounces cream cheese |
1/3 cup minced green onions |
1 teaspoon basil |
1 clove minced garlic |
1 teaspoon salt |
2 teaspoons freshly ground black pepper |
1 pound bacon |
1 package dry ranch dressing |
Directions:
1. Preheat oven to 400. 2. Pierce potatoes with fork several times and rub with oil. 3. Combine salt and pepper together and roll oiled potatoes in this mixture before baking. 4. Place in single layer in non-stick cooking sprayed shallow baking pan. 5. Bake uncovered for 50 minutes and allow to cool. 6. Combine cheeses, sour cream, green onions, basil, garlic, salt, pepper, 1/2 of bacon and dressing. 7. Mix well. 8. When potatoes are cool enough to handle cut in half and scoop out pulp from middle of potatoes. 9. Add to cheese mixture and mix until all ingredients are well blended. 10. Stuff mixture back into potatoes then top with remaining bacon. 11. Bake an additional 15 minutes. |
