Ready, Set, Cook! Special Edition Contest Entry. This is my spicy twist on the traditional favorite. I tweaked my recipe a little to fit the contest perameters but it is still a winner with my bunch. Ingredients:
1 (24 ounce) package simply potatoes traditional mashed potatoes |
1 1/2 lbs ground beef |
1/2 lb bacon, chopped |
3 green onions, chopped |
1/2 cup red bell pepper, diced |
1 jalapeno, finely diced |
2 (1 1/4 ounce) packages taco seasoning mix |
1/2 cup water |
Directions:
1. Prepare potatoes as per package directions. Add bacon and one onion. Salt and pepper to taste. 2. Cook beef until browned. Add seasoning mix and water; cook until water evaporates. Remove from heat. Add remaining onions and peppers to meat mixture. 3. Place meat in bottom of large casserole dish. Cover with potatoes. 4. Bake, uncovered, at 350 degrees for 40-50 minutes or until top is golden brown. |
