I've seen french fries cooked this way on a few cooking shows and decided to give them a try. I will never make them any other way again.....Takes a little time but worth the effort. The inside is like a pillow of potato and the outside is so crunchy. Ingredients:
oil to fry, i used canola |
2 large russet potatoes, sliced lengthwise to 1/4-1/2 inch thickness, placed in water and then completely dried before frying |
kosher salt |
Directions:
1. In dutch oven, heat oil to 300 2. Add fries and cook 3-4 minutes (should be cooked on the inside with no color on the outside) 3. Remove and put on backing rack above a baking sheet 4. Cool 5. Bring oil temp up to 375 6. Add fries and cook until golden brown 7. Remove and drain on baking rack 8. Add salt immediately |
