Twice Baked Sweet Potatoes |

I found this is the Kraft Food and Family Fall 08 book. We tried these and loved them! Ingredients:
2 large sweet potatoes (1 1/2 lb) |
2 ounces (1/4 8 oz pkg) neufchatel cheese, cubed |
2 tbl fat-free or 1% milk |
1 tbl brown sugar |
1/4 tsp ground cinnamon |
1/4 c pecan pieces |
Directions:
1. 425F oven 2. Cut potatoes lengthwise in half; place, cut sides down, in a foil lined baking pan 3. Bake 30 to 35 minutes or until tender 4. Scoop out centers of potatoes into a bowl, leaving 1/4 inch thick shells 5. Add cheese, milk, brown sugar and cinnamon to the potatoes; mash until blended 6. Spoon mixture into shells; top with nuts 7. Bake 8 minutes or until potatoes are heated through and nuts are toasted |
