This is my microwave baked easy stuffed potatoes we had with Pleclares Ultimate bbq Rubbed Chicken last night. I just had to post both of these pics - LOL - check out what the reflection from the under-cabinet lights did on the plate! Read more ! Smily faces! Hilarious.... Oh, and the potatoes are good too - LOL Ingredients:
2 baking potatoes |
1/2 cup (or more) sour cream - i don't measure something like this |
1/2 cup (or more) shredded cheddar |
minced garlic (optional, sometimes i do, sometimes i don't) |
chopped green onions or chives (usually use, but didn't have any last night) |
salt and pepper to taste |
that's it |
Directions:
1. Cut a slit around very top portion on each potato in a circle till it meets the other side 2. Place in microwave oven (you can bake in a conventional oven, but WHY in this heat) 3. Ovens vary, mine has a sensor cook with a baked potato setting I just hit for 2 potatoes 4. When done, let cool so you can touch them, lift off lid and (I use a grapefruit spoon) scoop out potato innards being careful not to get too close to skin so that it doesn't tear. 5. Put innards in bowl and mash up adding sour cream, cheese and onions and garlic if using. 6. Stuff back into potato skins - there will be a lot more stuffing that before 7. Put back in micro just before your meat is ready and nuke a couple minutes if necessary to reheat - I say this cuz you can make them ahead of time by quite a while. |
