twice baked squash Ingredients:
squash , the tougher rind kind |
any sweet onion, vadalia or walla walla |
bacon cooked and cooled, or diced smoked ham |
butter |
farmers cheese |
Directions:
1. Twice baked squash 2. Halve, and clean an Acorn, turban, or buttercup squash. 3. Carefully, with the squash hot out of the oven, remove the cooked squash, from the rind, save the rind 4. In a bowl mash the squash to a creamy consistency 5. To the bowl 6. Add six pats of butter 7. 1/8th of a cup of diced onions 8. 6 strips of cooked crisp cooled and diced bacon 9. Refill squash rinds 10. Cover with grated farmer’s cheese 11. Re-heat in oven under broiler until cheese is golden brown and bubbles |
