A favorite among my friends and family. Ingredients:
4 idaho potatoes or 4 yellow potatoes |
2 ounces bacon, diced |
1/2 medium onion, finely diced |
1/4 cup cream |
2 tablespoons butter |
1 tablespoon paprika |
1 teaspoon garlic powder |
1 teaspoon salt |
1 teaspoon fresh ground pepper |
1/2 cup grated parmesan cheese |
1/2 cup grated cheddar cheese |
fresh diced chives |
Directions:
1. Cut potatos in half length wise and boil for 20-30 minutes. Set in cold water untill cool enough to handle. Using a spoon hollow out the insides using a spoon. Carve out insides in shallow strokes so as to produce thin shavings of potatoe not chunks untill the potatoe shell is about 1/4 thick. Set shells aside. 2. Preheat oven to 350. 3. in 2 Qt Sauce pan cook bacon pieces. Add onion, cream, butter, onion, paprika (and no, that's not a typo, one full Tablespoon of paprika), garlic powder, salt, pepper, and parmesan cheese. Place burner on medium and cook stiring until thick and steaming. Add cream if needed to adjust to desired consistency. 4. Spoon filling into shells, cover with shredded cheese and bake for an additional 20 minutes. 5. Top with fresh chives. |
