Twice-Baked Potatoes II

Ingredients:
1 slice bacon
2 baking potatoes
1/4 cup milk
2 tablespoons sour cream
1 tablespoon scallion, chopped
1/2 teaspoon salt
dash pepper
1/4 cup cheddar cheese, shredded
Directions:
1. Between 2 layers of paper towel, cook bacon 1 1/2 minutes on High until crisp.
2. Crumble bacon coarsely; set aside
3. With fork, pierce potatoes in several places.
4. Cook, on clean paper towel, on High 6-8 minutes; (turn potatoes over halfway through cooking.
5. Cut off top fourth of each potato; scoop out potato from shells and tops; reserve shells.
6. In medium bowl, mash potato with milk, sour cream, onion and salt/pepper.
7. Spoon mixture back into shells.
8. Top each with cheese and bacon.
9. Cook on High 2-3 minutes until hot and cheese melts.
