A friend of mine sent this to me when I couldn't find a potato I wanted to make for Valentines Day. This recipe can be made in the microwave but I did it in the oven. Enjoy! you will want seconds! Ingredients:
4 medium baking potatoes |
3/4 cup shredded cheddar cheese |
3/4 cup french onion dip |
1/2 cup bacon bits |
4 green onions |
1/4-1/2 teaspoon pepper |
1 bit extra cheese for the top potato |
Directions:
1. Cook potatoes until tender. About an hour on 350. Let cool until cool enough to handle. Meanwhile, in a small bowl, 3/4 C cheese, dip, bacon, onions, and pepper. Cut a thin slice off the top of each potato and discard. Scoop out the pulp, leaving a thin shell. Add pulp to the mayo mixture and mash. Spoon into the potato shells. I put them in the oven at 350 for 20 minutes, the tops were crispy and so was the shell! Yummy! 2. Or microwave uncovered on high for 5 mins or until heated through. 3. Yummy! |
