Twice Baked Onion Potatoes |

One of our terrific daughter in laws makes these every thanksgiving they share with us. they are a tradition for her family and we gladly made them a tradition as well they are so good Ingredients:
4 large baking potatoes |
1 pound of sliced bacon chopped |
1 to 1 and 1/2 cups finely chopped onion |
1/2 cup sour cream |
2 to 3 tablespoons milk |
1 cup diced american cheese |
1/2 cup shredded chedder cheese |
4green onions finely sliced |
Directions:
1. preheat oven to 400 degrees 2. bake potaotes for one hour or until tender 3. while potatoes are baking cook the bacon in a skillet until crisp 4. remove bacon from skillet to paper towels 5. drain drippings reserving 1 tablespoon 6. in drippings saute onions until tender and set aside 7. when potaoes cool enough to handle cut in half lenghtwise 8. scoop out pulp leaving about a 1/8 inch shell 9. in a bowl beat the potato pulp sour cream and milk until creamy 10. stir in the onions american cheese and 1 cup of the bacon 11. spoon mixture bake into the shells 12. place on a baking sheet and return to the oven for 25 minutes 13. remove from oven and sprinkle on the cheddar cheese remaining bacon and green onion slices 14. return to the oven just until the cheddar cheese is nicely melted |
