This potato salad has a bit more twang than your usual mayo based potato salad. It is wonderful to take to a potluck or family gathering. This salad takes a bit more time to prepare but it is worth it. Note prep time includes 2 hours of refrigeration time. Ingredients:
10 medium red potatoes, peeled (leave a bit of peel on for added color) |
1/2 cup chopped green onion top |
1/4 cup vegetable oil |
1/4 cup vinegar |
2 tablespoons onions, minced |
1 1/2 teaspoons salt (optional) |
1/4 teaspoon pepper |
1/2 cup mayonnaise |
1/2 cup plain yogurt |
1/2 cup thinly sliced celery |
Directions:
1. Place potatoes in a large pot and cover with water. Bring to a boil and cook until fork tender, 20-30 minutes. 2. Meanwhile, in a large salad bowl or serving bowl, combine chives, oil, vinegar, onion, salt and pepper; mix well. 3. Drain potatoes and cool enough to handle. Cut into cubes, add to oil mixture and toss gently to coat. 4. Cover and refrigerate for at least 2 hours. 5. Meanwhile, in a small bowl, combine mayonnaise and yogurt; chill. 6. Just before serving, fold the mayonnaise mixture and celery into the potato salad being carful not to break up all of the pieces of potatoe. |
