Excellent vegetarian chili. TVP (Textured Vegetable Protein) replaces the meat and holds all the flavor. Serve with shredded cheese on top or with rice. Simple to get on the stove. Ingredients:
1 cup tvp |
7/8 cup chicken (or veg or beef) broth |
1 large onion, chopped |
1 large green pepper, chopped |
1 lb. crushed tomatoes |
1 lb. tomato sauce |
15 oz. can kidney beans |
15 oz. can pinto beans |
3 tablespoons chili powder |
1 teaspoon oregano |
1/2 teaspoon cumin |
Directions:
1. Combine TVP & broth in dutch oven & bring just to a boil on high heat 2. Remove & let sit ~ 5 minutes until liquid absorbed 3. Add remaining ingredients, stir, & bring to a boil 4. Reduce heat to low & simmer ~ 30-40 minutes or until veggies are tender |
