An amazing recipe, : healthy, pretty, delcious, moist, freezes well and easy! Very versatile. May keep batter in covered bowl in fridge for 2 tp 3 weeks. But add fruit before baking to prevent soggy fruit
Ingredients:
1, 16 oz box of raisin bran cereal or cinnamon cluster raisin bran
5 cups flour- white whole wheat for healthier
2 cups sugar or splenda for sugar free
5 tsp baking soda
4 eggs or egg substitute
1 cup oil- i use light olive
4 cups buttermilk, i use low fat
15 oz pkg mixed berries, thaw if frozen- not in juice
or 2 cups fresh berries ( raspberries or blueberries etc. or mixed )
Directions:
1. Heat oven to 350F
2. In one large bowl mix in dry ingredients
3. In another whisk liquid ingredients together
4. Blend both mixtures together.
5. Fill muffin tins 3/4 full
6. Bake about 25 minutes or golden and firm
7. Cool on rack
8. May freeze these.
9. I make 3 dozen at once but batter can remain in covered bowl in refrigerator for a few weeks.
10. Stir in fruit just before baking
