This is a great appetizer, but is also good as a main dish if you are ready for a spicy, cheesy, meatless treat. We love these and hope you do too. Ingredients:
3 medium flour tortillas |
1/2 pound oaxaca cheese shredded |
1/2 pound monterey jack cheese shredded |
1/3 pound anejo cheese grated |
1/2 pound poblano peppers sliced |
1/4 cup fresh cilantro finely chopped |
oil for frying |
Directions:
1. Preheat oven to 350. 2. Roast poblanos then remove their skins and seeds and slice into strips. 3. In large frying pan fry a tortilla in oil until golden brown. 4. Remove to paper towels then drain well and place on a baking sheet or pizza pan. 5. When tortilla has cooled cover it with a thin layer of Oaxaca cheese then jack cheese. 6. Crumble anejo on top of those layers then sprinkle finely chopped cilantro on top of that. 7. Arrange the pepper slices in a geometric pattern on top of the cheeses. 8. Bake 5 minutes then remove from oven and use a pizza cutter to slice into individual portions. 9. Serve immediately. |
