This is so simple but so good. It is a dish you find in the Tuscany region of Italy. Use as a side dish or eat with a salad and some really good crusty bread. Use dry beans not canned you can really tell the difference. Ingredients:
1 pound dried great northern beans |
6 cups cold water |
1/4 cup extra-virgin olive oil |
2 tablespoons chopped fresh sage |
2 garlic cloves, minced |
salt and pepper |
additional olive oil |
Directions:
1. Sort through the beans, rinse, drain and then place in a large saucepan 2. . Add cold water to cover by several inches and leave to soak overnight. 3. Drain the beans and return to the saucepan. 4. Add the 6 cups of cold water, 5. 1/4 cup of olive oil, 6. chopped sage and garlic. 7. Bring to a boil. Reduce the heat to medium-low, cover and simmer, stirring occasionally, until the beans are just tender but not falling apart (45 minutes to 1 hour.) 8. Season with salt and pepper to taste. 9. Using a slotted spoon, transfer the beans to a pre-warmed bowl. 10. Top with additional olive oil. 11. Makes 6 servings |
