Tuscan White Bean, Tuna And Fennel Salad |

My take on a Weight Watchers recipe, tuna and cannelini beans, crunchy vegetables in a light vinaigrette. Ingredients:
2 scallions, chopped |
1 medium carrot, diced |
1 cup chopped fennel bulb |
1 or 2 tbsp chopped fresh basil |
1 tbsp chopped fennel fronds |
2 tbsp capers, drained and rinsed |
2 tbsp olive oil |
1 tbsp white balsamic vinegar |
1 tsp tuscan or italian seasoning blend |
1/2 tsp pepper |
1 6 oz. can tuna, drained and flaked |
1 15.5 oz can cannelini beans, drained and rinsed |
4 cups chopped romaine or other lettuce blend |
Directions:
1. Combine everything except lettuce (this will store covered in refigerator for a couple days - you may need to add a splash more vinegar and/or oil as needed) 2. Serve on or tossed with lettuce. 3. (You can also add tomatoes and/or cucumbers...whatever veggies you have on hand!) 4. For Weight Watchers, this comes out to 6 PointsPlus per serving |
