This recipe was adapted from 'The Complete Vegan Kitchen'. Ingredients:
2 cups white beans (great northern or cannellini) |
1 teaspoon oil |
2 small onions, thinly sliced |
4 garlic cloves, thinly sliced |
1 tablespoon lemon juice |
2 tablespoons extra virgin olive oil |
1 tablespoon chopped fresh sage |
sea salt |
Directions:
1. Put the oil in a pan over high heat. 2. Put beans in a food processor. 3. Add the onions and garlic, and stir until the onions have a light golden color. 4. Add the cooked onion and garlic, lemon juice, and olive oil to the beans in the food processor. 5. Puree all of the ingredients. 6. Add sage and sea salt to taste. 7. Adjust thickness with water. |
