Tuscan Tomato Soup With Garlic Croutons |

START with fresh roasted tomatoes. Ingredients:
small loaf of sliced stale bread rubbed with garlic clove and baked in slow 200 degree oven for 15 min. |
3-4 tbsp. olive oil |
4-5 large cloves of garlic, chopped |
1/3 - 1/2 cup fresh basil leaves |
1 1/2 pounds roasted plum tomatoes (cut in half, drizzle with olive oil and sea salt and bake in high temp oven) |
2 cups vegetable stock |
1 onion |
Directions:
1. In olive oil, cook onion until it's carmelized. 2. Add garlic and cook 2 minutes (on low). 3. Add basil, reduce heat and add stock. 4. Simmer for 2 minutes. 5. Add roasted tomatoes, season and cook for 5 minutes 6. Serve with croutons and fresh basil leaves. |
