Cooking Light - quick and easy vegetarian dish Ingredients:
2 tsp extra virgin olive oil |
1 cup zucchini, chopped |
1/2 cup onion, sliced thin |
1/2 cup red bell pepper, diced |
1 tsp dried oregano |
2 cloves garlic, minced |
1 cup tomato, peeled and diced |
15 oz. cannellini beans, rinsed |
2 tsp (2 sprigs) rosemary |
1 cup spinach, chopped |
1/2 cup skim mozzarella cheese , shredded |
1 fresh ground black pepper |
Directions:
1. Heat oil until smoking. Add zucchini and next 4 ingredients, through garlic, and saute 2 minutes. Stir in tomato, beans, and rosemary; cook 2 minutes. Stir in spinach and remaining ingredients; cook until spinach wilts and cheese begins to melt. Discard rosemary. |
