A delicious, hearty soup. Serve with a crusty Italian bread for a satisfying meal.
Ingredients:
1 pound italian sausage, cut iinto 1/2 inch pieces
1/2 pound chicken breast, cut into 1/2 inch pieces
3/4 cup chopped onion
2 cloves garlic, minced
1 tablespoon olive oil
2 cups spinach leaves, coarsely chopped
15 oz. can cannelini beans, drained
14 1/2 oz. can diced tomates, undrained
1 14 1/2 oz. can chicken broth
1/2 teaspoon red pepper flakes
2 tablespoons freshly grated parmesan cheese
Directions:
1. In a large saucepan or dutch oven, cook sausage, chicken, onion and garlic in olive oil until sausage is no longer pink.
2. Add all ingredients except parmesan cheese.
3. Bring to a boil and simmer for 20-25 minutes or until heated through.
4. Serve topped with paremesan cheese.
