These are a take on Mario Batalli's recipe. I love peas!! These are wonderful and can be served as a side with any meat. I like them with meatloaf and mashed potatoes. Ingredients:
4 tablespoons extra-virgin olive oil |
1 onion, cut into a fine dice |
1 clove garlic, minced |
1 tablespoons granulated sugar |
1 teaspoon chili flakes |
1 tablespoon tomato paste (can use paste in a tube) |
2 cups fresh green peas (can substitute frozen) |
salt |
Directions:
1. In a large saute pan heat the oil. 2. Add the onion and garlic. Cook until translucent, about 6 to 8 minutes. 3. Add the sugar, chili flakes and tomato paste and cook until rusty looking 4 to 5 minutes. 4. Add the peas and cook until very tender, 8 to 10 minutes. 5. Season with salt. |
