Such a delicious meatloaf - Serve with roasted squash and steamed fresh spinach or Swiss chard. Ingredients:
1/3 cup barbecue sauce, divided (i prefer bull's eye bold original) |
1/2 lb extra-lean ground beef |
1 cup fresh whole wheat breadcrumbs |
1 small onion, finely chopped |
1/3 cup fresh basil, chopped |
1/4 cup parmesan cheese, light, grated |
1/4 cup kraft sun-dried tomato and oregano salad dressing |
2 tablespoons garlic, minced |
1 egg, beaten |
Directions:
1. Heat oven to 350°F. 2. Reserve 2 tablespoons BBQ sauce. Mix all remaining ingredients just until blended; press into 8x4-inch loaf pan. 3. Bake 1 hour 5 minutes or until done, brushing with reserved BBQ sauce after 50 minutes. 4. Let stand 5 minutes before slicing to serve. |
