Quick and tasty. Ingredients:
1/2 tsp dried rosemary, crushed |
1/2 tsp salt |
1/4 tsp black pepper |
1 lb skinless boned chicken breast , cut into 1 pieces |
1 tbsp extra virgin olive oil |
2 cloves garlic, minced |
1/2 cup low-sodium chicken broth |
15 1/2 ounce cannellini beans, rinsed |
7 ounce roasted red peppers , rinsed and cut into 1/2 strips |
3 1/2 cups baby spinach |
4 tbsp parmesan cheese, grated. |
Directions:
1. Combine spices in a bowl and mix well. Add chicken pieces and toss to coat. 2. Heat olive oil in a large non-stick skillet over medium high heat. Add chick mixture and saute 3 minutes. Add garlic and saute 1 minute. Add broth, beens and bell peppers; bring to a boil. Reduce heat and simmer partially covered for 10 minutes or until chicken is done. 3. Stir in spinach and simmer 1 minute. Serve with Parmesan cheese at the table. |
