olive oil-flavored cooking spray |
1 pound skinned, boned chicken breasts, cut into 1-inch pieces |
1 teaspoon dried rosemary, crushed or 2 teaspoons chopped fresh rosemary |
1/4 teaspoon salt |
1/4 teaspoon freshly ground pepper |
1 cup fat-free, reduced-sodium chicken broth |
1 (16-ounce) can cannellini beans, rinsed and drained |
2 tablespoons sun-dried tomato sprinkles |
fresh rosemary (optional) |
Directions:
1. Coat a large nonstick skillet with cooking spray; place over medium heat until hot. Add chicken; sprinkle with rosemary, salt, and pepper. Stir-fry 2 minutes. 2. Add broth, beans, and tomato sprinkles to skillet; bring to a boil. Reduce heat, and simmer, uncovered, 8 minutes or until chicken is done. Sprinkle with fresh rosemary, if desired. |
